INGREDIENTS:

- Boneless, skinless chicken thighs (3 pounds)

- Garlic cloves (3 whole, peeled)

- Onion (1, halved)

- Kosher salt

- Dry oregano

- Homemade chicken stock (4 cups)

- Water (1 cup)

- Olive oil

- Chipotle peppers in adobo sauce

- Tomato product (e.g., San Marzano tomatoes)

- Mexican cotija cheese

- Fresh cilantro

DIRECTIONS:

1. In a pot, combine boneless, skinless chicken thighs with garlic cloves, halved onion, kosher salt, dry oregano, and homemade chicken stock.

2. Simmer the mixture for 30 minutes until the chicken is fully cooked.

3. Remove the onion and chicken from the pot and allow them to cool before shredding the chicken.

4. Strain the stock and set it aside.

5. Saute an onion in the same pot until softened and slightly caramelized.

6. Pour the strained stock back into the pot and simmer until reduced by half.

7. Prepare the sauce by blending chipotle peppers in adobo sauce, rinsed out can liquid, tomato product, and onions until smooth.

8. Add the sauce to the reduced stock in the pot and simmer for about 50 minutes.

9. Stir in the shredded chicken and cook for an additional 10-15 minutes to allow the flavors to meld.

10. Season with salt as needed and serve the Chicken Tinga garnished with Mexican cotija cheese and fresh cilantro.
